Atlantic scallop Carpaccio, grapefruit textures, micro-amaranth, green onion oil

Braised pork belly, mustard, parmesan and maple sugar crust, fluffy Blackburn cheese with parsnip “aligot” reduction jus
Rolled veal shoulder, salted lemon and mango “lacque,” with cinnamon butternut squash purée and king mushroom chips
Shrimp poached “à la minute”, whipped lemon and butter sauce accompanied by dill roasted carrots

Bio
Laurent Godbout began his career at the Auberge Hatley, a 5-star member of the Relais et Châteaux resorts located in North Hatley, Québec. From there, he trained in France for two years before returning to Montréal. He became executive chef at Restaurant Thai-Thai in 1997and later executive chef at the Hostellerie Rive Gauche. He then spent two years as a professor of professional cooking at the École Professionnelle Jacques Rousseau.

Très chic Hollywood is set to become even more so this September when Québec In Hollywood kicks off a three week celebration of Québec's unique brand of creativity and flair. Prepare to be dazzled by the sights and sounds, artistry and flavors, of North America's own thriving slice of French-speaking culture. Slated events include a Québec film festival at the Egyptian Theatre, performances by top bands and comedy acts, a Montréal fashion runway show at Hollywood & Highland Center, special restaurant tastings with renowned Québecois chefs, a green transportation design symposium, gallery exhibitions and more. The festivities will culminate with the premiere of IRIS, a new resident show helmed by Québec's very own Cirque du Soleil and set to run through 2021 at the legendary Kodak Theatre.
