Market Fresh Recipe: Roasted Tomato Soup with Thick Cut Bacon

A fresh take on a childhood favorite, this recipe combines roasted tomato soup with bacon.

Few things call childhood to mind like tomato soup. Usually served out of a can, here's a fresh take on this American comfort food.

Taking advantage of the tomatoes that are now in season at the farmers' market, this soup is made by gently roasting them in the oven with a little thyme, salt, pepper and extra virgin olive oil. They are then pureed along with their juices and a little stock. That's it!

While deceptively simple, don't be fooled. This soup packs big, bold flavor, really showcasing the tomatoes. Crispy thick cut bacon takes the place of toasted bread, and is served to be dunked into the soup.

Roasted Tomato Soup with Thick Cut Bacon
Serves 4-6 people
Cooking time: About 40 minutes
Dairy free; gluten free

Ingredients

  • 10 ripe tomatoes, quartered
  • 2 tablespoon olive oil
  • 1 tablespoon fresh thyme
  • 2 cups chicken or vegetable stock
  • salt & freshly ground pepper
  • 6 slices of thick cut bacon, cooked until crispy

Directions

  1. Preheat the oven to 350 degrees.
  2. Place the tomatoes in a roasting pan. Drizzle them with the olive oil, sprinkle with the thyme and season to taste with salt and pepper. Roast for about 30 minutes, or until well cooked.
  3. Remove the tomatoes from the oven and puree them and their juices with about 1-2 cups of stock until smooth.
  4. Adjust seasoning (salt and pepper) if needed.
  5. To serve, ladle the soup into bowls and lay a piece of crispy bacon across the top of the bowl.
